We use a mix of three different USDA butchers throughout the Finger Lakes area.
When purchasing beef (1/4, 1/2, 1) and pork (1/2 & 1) you get to pick your desired cuts.The buyer fills out the cut sheet specific for the butcher to get the meat cut to your liking.
Beef cost $5.00/lb hanging weight. That price includes processing (additional charges for cube steak, patties and chuck breakdown) A typical beef hangs anywhere between 750 to 850lbs.
Pork cost $3.75/lb hanging weight. The price includes processing but the buyer has to pay for all sausage and smoking charges. A typical hanging weight for pigs is 200 to 250lbs.
